This is the way I made the sails for my Mayflower model.
This video on model ship sails making does not want to be the ultimate guide on how to make the perfect sails, there are tons of ways, this is just one of them and it is the one I liked the most for my Amati Mayflower. So it's up to you and up to the look you want to give to your ship model.
This video is meant for beginners model ship builders.
I couldn't find a lighter fabric for that scale, but if you manage to do so try a thinner cloth in order to respect the scale proportions!
Although some details of the sails might be out of scale (like the thickness) for this specific model the method remains the same.

Note: the z fold of the panels in real life is around 30cm, at 1/60 scale it shouldn't go above .5cm. I managed to stay around .3cm.
